Though I love food, I can be pretty lazy and I've always fall back to roasting huge amounts of chicken with some olive oil, paprika, salt and pepper. These ingredients roast up in 30 mins at 350 degrees to make savory chicken that has a bit of smokiness and is great for packing lunches. Edit: My oven works at 350degrees for chicken but another blogger has tried this and her over didn't quite work out as well for that temp. You may wish to try 450 degrees instead.
Wanting to switch it up just a little, I ran across a recipe that uses those same ingredients but roasts up chickpeas and grape tomotoes alongside the chicken. You can find the original recipe here.
I mostly followed it but didn't bother with the yogurt sauce and only used the one type of paprika I had on hand. I also eyeballed a lot of the measurements.
Ingredients:
Olive Oil
Garlic
Paprika
Salt
Pepper
Cumin
Chicken Pieces (here I used skinless, boneless chicken breast cut in half and two chicken legs, cut into two pieces each)
Can of chickpeas (drained)
1 container of grape tomatoes (keep whole)
1 container of grape tomatoes (keep whole)
Mix up some olive oil, minced garlic, Paprika, and Cumin with a whisk. I just poured a lot of oil into a small bowl and dumped in Tbs of Garlic, Paprika and tbs of Cumin.
Pour over the chicken pieces, drained chickpeas and grape tomatoes in a sheet pan.
Salt and pepper everything
Roast at 350 degrees, 35-40mins or until done.
